Ingredients
  

  • 2 ribeye or sirloin steaks (10–12 oz each)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil or butter
  • 4–6 large eggs
  • 2 tbsp butter
  • 2–3 medium potatoes, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 small onion, diced
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • 1 cup stone-ground or regular grits
  • 4 cups water or milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter (plus extra for topping)
  • fresh herbs for garnish (parsley or chives)

Instructions
 

  • Pat steaks dry and season both sides with salt, black pepper, and garlic powder.
  • Heat a skillet or grill over medium-high heat. Add olive oil or butter.
  • Cook steaks 3–5 minutes per side for medium-rare, adjusting for thickness.
  • Remove steaks from heat and let rest for 5 minutes before slicing.
  • Heat olive oil or butter in a large skillet over medium heat.
  • Add diced potatoes and cook for 10–12 minutes, stirring occasionally until golden.
  • Add diced peppers and onions, sauté for another 5 minutes until softened.
  • Season with paprika, salt, and pepper. Keep warm.
  • Whisk eggs in a bowl until yolks and whites are fully combined.
  • Melt butter in a nonstick skillet over medium-low heat.
  • Pour in eggs and stir gently, cooking until soft and creamy. Season with salt and pepper.
  • Bring water or milk to a boil in a saucepan.
  • Slowly whisk in grits and reduce heat to low.
  • Cook for 15–20 minutes, stirring frequently to avoid lumps.
  • Stir in shredded cheddar cheese and butter. Top with an extra pat of butter and sprinkle with fresh herbs.
  • Arrange the steak, scrambled eggs, fried potatoes, and cheesy grits on a plate.
  • Garnish grits with fresh parsley or chives.
  • Serve immediately for the best flavor and texture.

Notes

Prep potatoes and grits a day ahead for convenience. Substitute dairy or butter with plant-based alternatives for a lighter or dairy-free version. Adjust seasoning to taste, and use fresh herbs to brighten flavors.
