Ingredients
  

  • 250 g fresh thick noodles
  • 200 g beef sirloin, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 green onions, chopped
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp freshly cracked black pepper
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • salt, to taste

Instructions
 

  • Bring a pot of water to a boil and cook the fresh thick noodles according to the package instructions until just tender. Drain and set aside, keeping the noodles slightly firm for stir-frying.
  • In a small bowl, combine soy sauce, oyster sauce, hoisin sauce, and freshly cracked black pepper. Stir until the sauce mixture is smooth and well blended.
  • Heat vegetable oil in a large wok or skillet over high heat. Add the thinly sliced beef and stir-fry for 2–3 minutes until browned and just cooked. Remove the beef and set aside.
  • In the same wok, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  • Add the sliced onion and red bell pepper to the wok. Stir-fry for 2–3 minutes until slightly softened but still crisp.
  • Return the cooked beef to the wok. Add the drained noodles and pour the prepared sauce over everything. Toss and stir-fry for 2–3 minutes so the noodles absorb the sauce evenly.
  • Drizzle sesame oil over the noodles, toss to combine, and garnish with chopped green onions and extra black pepper before serving hot.

Notes

Use high heat for the best stir-fry flavor and prep all ingredients before cooking since the process moves quickly. For extra heat, add chili flakes or sriracha. You can swap beef with chicken, tofu, or tempeh and use rice noodles or whole wheat noodles for variation.
