Equipment

  • oven
  • 4 ramekins or oven-safe cups
  • microwave-safe bowl
  • whisk
  • baking sheet
  • knife or spatula

Ingredients

  • 1 cup milk chocolate chips (or semisweet chocolate chips)
  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 3 large eggs
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 6 tbsp all-purpose flour
  • 1 scoop vanilla ice cream (per cake)
  • caramel sauce for drizzle
  • chocolate shell (optional)

Instructions

  • Preheat the oven to 400°F (205°C). Spray four oven-safe ramekins or cups with non-stick cooking spray and lightly dust with cocoa powder to prevent sticking.
  • In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring each time until the mixture is fully melted and smooth. Let it cool slightly.
  • Add powdered sugar to the melted chocolate mixture and whisk well. Add the eggs and egg yolk, mixing until smooth, then stir in the vanilla extract.
  • Gently fold the flour into the batter until just combined. Do not overmix to keep the cake tender.
  • Divide the batter evenly among the prepared ramekins and place them on a baking sheet for stability.
  • Bake for 13–15 minutes until the edges are set but the centers remain soft and slightly jiggly. Let cool for 1–2 minutes, then run a knife around the edges and invert onto plates. Serve immediately with vanilla ice cream and drizzle with caramel sauce.

Notes

Use high-quality chocolate for the best flavor. Do not overbake or the molten center will set. Room temperature eggs help create a smoother batter. You can substitute caramel sauce with chocolate ganache or berry sauce for variation. For a deeper chocolate flavor, try using dark chocolate instead of milk chocolate.
