Ingredients
  

  • 2 large zucchini (about 1 pound)
  • 1 cup almond flour
  • 1 cup finely grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 teaspoon Italian seasoning
  • salt, to taste
  • black pepper, to taste
  • avocado oil (for frying or brushing)

Instructions
 

  • Wash and dry the zucchini thoroughly. Trim off the ends, slice in half lengthwise, then cut into evenly sized sticks like traditional fries. Pat dry with paper towels to remove excess moisture.
  • In one shallow bowl, beat the eggs until smooth. In another bowl, combine almond flour, Parmesan cheese, Italian seasoning, salt, and black pepper. Stir well to evenly distribute.
  • Dip each zucchini stick into the beaten egg, letting excess drip off. Roll in the almond flour mixture, pressing gently so the coating sticks evenly. Place coated sticks on a plate or baking sheet.
  • Cook using one method: Air Fryer – Preheat to 400°F and cook 12–16 minutes, flipping halfway. Oven – Preheat to 350°F and bake 15–20 minutes, flipping halfway. Pan-Fry – Cook in avocado oil over medium heat for 2–3 minutes per side until golden and crispy. Serve immediately.

Notes

For extra crispiness, always pat the zucchini dry before coating. Cook in a single layer and flip halfway through for even browning. Freshly grated Parmesan melts and crisps better than pre-shredded cheese. These fries are best served immediately. To reheat, use an oven or air fryer at 375°F for 5–8 minutes. You can freeze breaded, uncooked fries and cook from frozen, adding a few extra minutes.
