Ingredients
  

  • 6 chicken drumsticks
  • 2 tbsp olive oil
  • 1/3 cup honey
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 4 medium potatoes, peeled and cubed
  • 3 tbsp butter
  • 1/2 cup warm milk
  • 1/2 tsp salt for mashed potatoes
  • 1/4 tsp black pepper for mashed potatoes
  • 1 tbsp butter for gravy
  • 1 tbsp flour
  • 1 cup chicken broth
  • 1/4 tsp black pepper for gravy
  • 1 pinch salt for gravy
  • 1 cup carrots, sliced
  • 1 cup sweet corn kernels
  • 1 tbsp butter for vegetables
  • 1 pinch salt for vegetables
  • 1 tbsp fresh parsley, chopped for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish. In a bowl whisk together honey, soy sauce, minced garlic, paprika, black pepper, salt, and dried thyme. Place the chicken drumsticks in the dish and brush them generously with the honey glaze.
  • Bake the chicken drumsticks for 35–40 minutes, turning halfway through cooking. Brush with extra glaze while turning to help create a sticky caramelized coating. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  • Boil the cubed potatoes in salted water for about 15 minutes or until tender. Drain well and mash with butter, warm milk, salt, and black pepper until smooth and creamy.
  • Melt butter in a small saucepan over medium heat. Stir in flour and cook for about 1 minute. Gradually whisk in chicken broth and cook until the gravy thickens, then season with salt and black pepper.
  • Steam the sliced carrots for 6–8 minutes until tender. In a small pan melt butter and toss the carrots and sweet corn with a pinch of salt until warm and lightly coated.
  • Serve the honey glazed chicken drumsticks with creamy mashed potatoes topped with gravy. Add the carrots and corn on the side and finish with a sprinkle of fresh chopped parsley.

Notes

For extra flavor, brush the chicken with glaze multiple times during baking to create a deep caramelized coating. You can swap honey with maple syrup, use low-sodium soy sauce, or substitute vegetables like green beans or peas. For dairy-free options, replace butter with olive oil or plant-based butter and use almond or oat milk in the mashed potatoes.
