Ingredients
  

  • 1 large onion, thinly sliced
  • 1 tbsp butter or olive oil
  • 1 tsp brown sugar
  • 1 tsp balsamic vinegar
  • 2–3 tbsp water
  • 200 g ground beef
  • salt and pepper, to taste
  • 4 slices cheddar cheese
  • 1 tsp cooking oil or butter
  • 3 tbsp mayonnaise
  • 1 tsp mustard
  • 1 tsp tomato paste
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • 1 tsp Sriracha or preferred hot sauce
  • 2 large croissants
  • optional toppings: lettuce, tomato slices, pickles

Instructions
 

  • Melt butter in a skillet over medium heat.
  • Add thinly sliced onions and cook, stirring occasionally, for about 5 minutes until soft.
  • Sprinkle with brown sugar, add balsamic vinegar, and stir.
  • Pour in 2–3 tablespoons of water, cover, and let simmer for 10–15 minutes until onions are sweet and tender.
  • Remove lid, reduce any excess liquid over medium heat, and set aside.
  • Divide ground beef into two balls (about 100 g each).
  • Heat a non-stick skillet or griddle with 1 tsp oil on medium-high.
  • Place each beef ball on the hot surface. Cover with parchment and press to smash into thin patties.
  • Cook for 1–2 minutes until edges are browned and crispy. Flip, add cheddar slices, and cook another 1–2 minutes until cheese melts.
  • Season with salt and pepper to taste.
  • Slice croissants in half horizontally.
  • Toast lightly in a skillet or oven until golden brown and slightly crisp.
  • Spread spicy mayo sauce on both halves of the toasted croissant.
  • Layer the bottom half with a cheesy smashed patty.
  • Top with generous onion confit and optional toppings like lettuce or tomato.
  • Close with the top croissant half and press gently.
  • Serve immediately while warm and melty.

Notes

Try variations with different cheeses, sauces, or plant-based patties. Make ahead by preparing onion confit and patties in advance, then toast croissants just before serving for optimal texture.
