Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp Italian herb seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1/2 cup cooking cream or half-and-half
  • 1 tsp Dijon mustard
  • 1 tbsp butter
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme leaves
  • 2 cups mashed potatoes
  • 2 cups carrots peeled and sliced
  • 1 tbsp butter for carrots
  • 1 tbsp honey or maple syrup
  • 1/2 tsp salt for carrots

Instructions
 

  • Pat the chicken thighs dry with paper towels and season both sides with salt, black pepper, paprika, and Italian herb seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 5–6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  • In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Pour in the chicken broth and scrape the browned bits from the bottom of the pan. Stir in the cooking cream and Dijon mustard and simmer for 3–4 minutes until slightly thickened.
  • Add butter, chopped parsley, and thyme to the sauce and stir until smooth. Return the chicken to the skillet and spoon the sauce over the top to coat.
  • In a small pan, cook sliced carrots with butter, honey, and salt for 8–10 minutes until tender and lightly glazed. Warm the mashed potatoes if needed.
  • Arrange mashed potatoes on plates, place the chicken on top, and spoon the creamy herb sauce over it. Serve with the glazed carrots on the side.

Notes

For best flavor, dry the chicken well before searing to achieve a golden crust. Simmer the cream sauce gently so it stays smooth. Fresh parsley and thyme provide the best aroma, but dried herbs can be used at half the quantity. Chicken breasts can replace thighs if preferred, though they may cook faster.
