Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 cloves garlic, finely minced
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 cup mayonnaise
  • 1/4 cup finely grated Parmesan cheese
  • 3 tbsp olive oil
  • salt and freshly ground black pepper to taste
  • 6 cups chopped romaine lettuce
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 cup shaved Parmesan cheese
  • 1 cup croutons

Instructions
 

  • Pat the chicken breasts dry and rub with olive oil, salt, pepper, and garlic powder. Heat a grill pan or skillet over medium heat and cook for 5–7 minutes per side until the internal temperature reaches 165°F (74°C). Let rest 5–10 minutes, then slice into strips.
  • In a bowl, whisk together minced garlic, lemon juice, Dijon mustard, and Worcestershire sauce. Add mayonnaise and grated Parmesan, whisking until smooth. Slowly drizzle in olive oil while whisking to emulsify. Season with salt and black pepper to taste. Refrigerate until ready to use.
  • Wash and thoroughly dry the romaine lettuce, then chop into bite-sized pieces and place in a large bowl. Add the halved cherry tomatoes.
  • Drizzle half of the dressing over the lettuce and tomatoes and toss gently to coat. Top with sliced chicken, croutons, and shaved Parmesan. Add more dressing as desired and finish with freshly cracked black pepper. Serve immediately.

Notes

Add 1–2 finely chopped anchovy fillets or 1 teaspoon anchovy paste for a more traditional Caesar flavor. For a lighter version, replace half the mayonnaise with plain Greek yogurt. Grilled chicken thighs can be used instead of breasts for extra richness. Store dressing separately and toss just before serving to maintain crispness.
