Ingredients
  

  • 2 white fish fillets (tilapia, cod, or haddock)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 large potatoes, cut into fries
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/3 cup mayonnaise
  • 1 tsp lemon juice
  • 1 tbsp fresh parsley, finely chopped
  • 1 small garlic clove, minced
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Toss the cut potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread evenly on a baking sheet and bake for 25–30 minutes, turning halfway through, until golden and crispy.
  • In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper. Pat the fish fillets dry, rub lightly with olive oil, and coat evenly with the seasoning mixture.
  • Heat a skillet over medium-high heat. Cook the seasoned fillets for 3–4 minutes per side until a dark crust forms and the fish flakes easily with a fork. Drizzle with fresh lemon juice.
  • Combine lettuce, cherry tomatoes, cucumber, and red onion in a bowl and toss lightly to mix the salad.
  • In a small bowl, mix mayonnaise, lemon juice, parsley, minced garlic, salt, and pepper until smooth. Taste and adjust seasoning if needed.
  • Arrange the blackened fish fillets, crispy fries, and garden salad on serving plates. Serve with the herb mayo dip on the side.

Notes

Pat the fish dry before seasoning for the best crust. Adjust cayenne pepper to control heat. Sweet potatoes can replace regular potatoes for a slightly sweeter and more nutritious fry option. Greek yogurt can be used instead of mayonnaise for a lighter herb dip.
