Ingredients
  

  • 4 breakfast sausage patties (beef or turkey)
  • 4 large eggs
  • 2 tbsp milk
  • 1/2 tsp paprika
  • salt and black pepper to taste
  • 3 medium potatoes, diced
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 cucumber, sliced
  • 1 large tomato, sliced
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Heat skillet over medium heat and cook sausage patties 4–5 minutes per side until browned and cooked through. Remove and keep warm.
  • Whisk eggs with milk, paprika, salt, and pepper. Scramble gently over low heat in the same skillet until soft and fluffy. Remove and set aside.
  • Heat olive oil in a pan over medium-high heat. Cook diced potatoes with garlic powder, salt, and pepper for 10–15 minutes, stirring occasionally, until golden and crispy.
  • Slice cucumber and tomato while potatoes cook.
  • Assemble the plate with sausage, scrambled eggs, crispy potatoes, and fresh vegetables. Sprinkle parsley on top and serve warm.

Notes

Cook eggs gently over low heat for a creamy texture. Use medium-high heat for crispy potatoes and avoid overcrowding. Sausage and potatoes can be pre-cooked for faster assembly. Customize with spices or sweet potatoes for variety.
