Ingredients
  

  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (for egg wash)
  • 4 ounces cream cheese, softened
  • 1/4 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1–2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • salt, to taste
  • black pepper, to taste
  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • fresh herbs (thyme, chives, or basil), optional

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly roll out the puff pastry on a floured surface to smooth the seams. Transfer it to the prepared baking sheet and gently score a 1-inch border around the edges without cutting all the way through.
  • In a medium bowl, combine cream cheese, ricotta, Parmesan, minced garlic, lemon zest, salt, and black pepper. Mix until smooth and well blended. Spread the mixture evenly inside the scored border, keeping the edges clear.
  • Trim the woody ends of the asparagus and arrange the spears over the cheese layer in a single row. Brush the pastry edges with beaten egg. Drizzle asparagus with olive oil and sprinkle lightly with salt and pepper. Bake for 20–25 minutes until the pastry is golden and puffed and the asparagus is tender. Let cool slightly, garnish with fresh herbs, slice, and serve.

Notes

Keep puff pastry chilled before baking for best rise. Avoid overloading the cheese layer to prevent a soggy crust. Rotate the pan halfway through baking for even browning. Let the tart rest 5–10 minutes before slicing. You can substitute ricotta with Greek yogurt for a lighter option or use goat cheese for extra tang. Store leftovers in the refrigerator up to 3 days or freeze up to 1 month.
