Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 5 tbsp melted butter
  • 1 cup fresh or frozen strawberries
  • 3 tbsp granulated sugar
  • 600 g full-fat cream cheese, softened
  • 1.5 cups powdered sugar
  • 0.5 tsp vanilla extract
  • 2 cups heavy whipping cream, whipped to stiff peaks

Instructions
 

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan using the bottom of a measuring cup. Chill for 20–30 minutes while preparing the filling.
  • In a small saucepan over medium heat, combine strawberries and sugar. Cook for 5–8 minutes until softened and juicy. Mash lightly and continue cooking until slightly thickened. Remove from heat and cool completely.
  • Beat softened cream cheese until smooth. Add powdered sugar and vanilla extract and mix until silky. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until light and airy.
  • Spread half of the cheesecake filling over the chilled crust. Spoon portions of the cooled strawberry mixture on top and swirl gently with a knife. Add remaining filling and repeat the swirling process. Smooth the surface.
  • Refrigerate for at least 6 hours or overnight until fully set. For faster setting, freeze 2–4 hours then transfer to the refrigerator. Remove from pan before serving and garnish if desired.

Notes

Use full-fat block cream cheese for the best texture and avoid spreadable varieties. Frozen strawberries work well but may require slightly longer cooking to reduce excess moisture. Chill overnight for the cleanest slices. For variation, try adding lemon zest, mixed berries, chocolate drizzle, or toasted coconut in the crust.
