Ingredients
  

  • 20 oz cherry tomatoes
  • 2 tbsp extra-virgin olive oil
  • 1/4 tsp flaky sea salt
  • 1 baguette, sliced into 1/2-inch rounds
  • 1 tbsp olive oil (for brushing)
  • 1 garlic clove, halved
  • 1 cup ricotta cheese, drained
  • 6-8 fresh basil leaves, roughly chopped
  • olive oil (for drizzling)
  • flaky sea salt, to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with 2 tbsp olive oil, and sprinkle with 1/4 tsp flaky sea salt.
  • Roast for 15–20 minutes until tomatoes are slightly wrinkled and caramelized. Remove from oven and let cool slightly.
  • Drain excess liquid from ricotta using a fine mesh strainer or paper towel. Whip with a fork or small whisk until smooth and creamy. Add a pinch of salt if desired.
  • Brush baguette slices lightly with olive oil and toast in the oven for 5–7 minutes until golden and crisp. Alternatively, grill lightly on a pan.
  • Rub each toasted slice with the cut side of the garlic clove for subtle flavor.
  • Spread a generous layer of whipped ricotta on each toasted slice. Top with roasted cherry tomatoes, sprinkle with fresh basil and flaky sea salt, and finish with a drizzle of olive oil. Serve immediately.

Notes

Drain the ricotta thoroughly to prevent soggy crostini. Roast tomatoes ahead of time and store separately for up to 3 days. Assemble just before serving for best texture. Add a drizzle of balsamic reduction, a pinch of red pepper flakes, or grated Parmesan for extra flavor variation.
