Ingredients
  

  • 8 bone-in chicken thighs and drumsticks (~2½ lb)
  • lb baby potatoes, halved
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 6 cloves garlic, pressed or finely minced
  • 1 tsp 7-spice blend (or ½ tsp paprika + ½ tsp cumin + ½ tsp garlic powder)
  • 1 tsp paprika
  • 2 tsp salt
  • 1 tsp black pepper

Instructions
 

  • Preheat your oven to 400°F (200°C). Pat the chicken and potatoes dry with paper towels.
  • In a small bowl, whisk together olive oil, lemon juice, pressed garlic, 7-spice blend, paprika, salt, and pepper.
  • Place the chicken in a large baking dish or roasting pan. Add the halved potatoes and drizzle the sauce over everything. Toss gently to coat and spread in a single layer.
  • Bake for 55–65 minutes, or until the chicken reaches 165°F (74°C) and potatoes are tender. Broil 2–3 minutes for extra golden color.
  • Remove from oven and let rest 5 minutes. Garnish with fresh parsley and serve.

Notes

This dish can be customized: swap vegetables, double the garlic for more flavor, or add herbs like thyme or rosemary. Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 2 months. Reheat in a 350°F oven to maintain crispy skin.
