Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon (optional)
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup neutral oil or melted butter
  • 1 tsp vanilla extract
  • 3 medium fresh apples, peeled and diced
  • 1/2 cup sliced almonds
  • 2 tbsp brown sugar or granulated sugar

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a rectangular baking pan with parchment paper or lightly grease it with butter or oil.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until evenly combined.
  • In a large bowl, whisk the eggs and sugar until smooth and slightly pale. Add the oil or melted butter and vanilla extract, then whisk until glossy and well combined.
  • Gradually add the dry ingredients into the wet mixture. Stir gently with a spatula until just combined, avoiding overmixing.
  • Fold the diced apples gently into the batter so they are evenly distributed.
  • Pour the batter into the prepared baking pan and spread it evenly with a spatula.
  • Sprinkle the sliced almonds evenly over the top of the batter and scatter the brown sugar on top.
  • Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 15 minutes before slicing into squares or rectangles and serving.

Notes

Use firm apples such as Honeycrisp, Fuji, or Gala for the best texture. Avoid overmixing the batter to keep the cake light and tender. Lightly toasting the almonds before topping the cake enhances their nutty flavor. You can substitute walnuts or pecans for almonds if desired.
