Ingredients
  

  • 2 lbs steak (filet, ribeye, New York strip, or sirloin), cut into 2–3 inch cubes
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb fettuccine or preferred pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup half-and-half
  • 1 cup freshly grated Parmesan cheese
  • to taste salt and pepper
  • 2 tbsp chopped green onions (optional, for garnish)

Instructions
 

  • Pat steak cubes dry with a paper towel.
  • Toss steak cubes with avocado oil, garlic powder, onion powder, salt, and pepper.
  • Heat a large skillet over medium-high heat and sear the steak for 2–3 minutes per side until browned and cooked to your desired doneness.
  • Remove steak from skillet and set aside.
  • Bring a large pot of salted water to a boil, add pasta, and cook according to package instructions until al dente. Drain and reserve 1/2 cup pasta water.
  • In the same skillet used for the steak, melt butter over medium heat.
  • Add minced garlic and sauté for 1–2 minutes until fragrant.
  • Pour in heavy cream and half-and-half, bringing to a gentle simmer.
  • Stir in Parmesan cheese until smooth and creamy. Season with salt and pepper. Adjust thickness with reserved pasta water if needed.
  • Add cooked pasta to the Alfredo sauce and toss to coat. Gently fold in steak bites.
  • Garnish with chopped green onions and extra Parmesan if desired. Serve immediately.

Notes

Steak can be substituted with chicken or shrimp for a lighter meal. Use lactose-free cream or plant-based milk with nutritional yeast if dairy-free. Any medium pasta shape works well. Optional seasonings: smoked paprika or Italian herbs for extra flavor.
