Ingredients
  

  • 4 eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • salt and black pepper to taste
  • 1 tbsp butter
  • 4 slices turkey bacon
  • 4 slices bread
  • 2 eggs (for French toast)
  • 1/2 cup milk (for French toast)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp sugar
  • 1 tbsp butter (for frying)
  • powdered sugar (for topping)
  • 2 potatoes, diced
  • 2 carrots, sliced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 200°C (390°F). Toss diced potatoes and carrots with olive oil, paprika, salt, and pepper. Spread on a tray and roast for 25–30 minutes, stirring halfway, until golden and tender.
  • Whisk eggs with milk, salt, and pepper. Melt butter in a pan over medium heat, add eggs, and gently stir. When nearly cooked, add cheese and let it melt.
  • Cook turkey bacon in a skillet over medium heat until crispy, turning occasionally. Remove and drain on paper towels.
  • Whisk eggs, milk, vanilla extract, cinnamon, and sugar in a bowl until fully combined.
  • Dip bread slices into the mixture. Cook in a buttered pan over medium heat until golden brown on both sides.
  • Arrange eggs, bacon, roasted vegetables, and French toast on a platter. Dust French toast with powdered sugar and serve warm.

Notes

Use low heat for soft scrambled eggs and avoid overcrowding vegetables while roasting. Swap cheddar for mozzarella or use plant-based alternatives if needed. Serve immediately for best texture and flavor. You can prepare vegetables and bacon ahead of time and reheat before serving.
