Ingredients
  

  • 4 slices thick brioche or challah bread
  • 3 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 pinch salt
  • 2 tbsp butter for frying
  • 6 slices bacon cooked until crispy
  • 1/4 cup maple syrup
  • 1 tbsp bourbon (optional)
  • powdered sugar for dusting
  • whipped cream for topping
  • fresh thyme leaves for garnish

Instructions
 

  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until the mixture is smooth and fully combined.
  • Heat a skillet or griddle over medium heat and melt the butter. Dip each slice of brioche or challah into the custard, coating both sides without oversaturating, then cook for 2–3 minutes per side until golden brown.
  • In a small saucepan over low heat, gently warm the maple syrup and bourbon together, stirring until combined and aromatic.
  • Place the cooked French toast on serving plates and top each portion with crispy bacon slices.
  • Drizzle the warm bourbon maple syrup over the toast, then finish with whipped cream, a dusting of powdered sugar, and a sprinkle of fresh thyme leaves before serving.

Notes

Use day-old brioche or challah for the best texture since it absorbs the custard without becoming soggy. Cook on medium heat to ensure the exterior turns golden while the inside stays soft. Bacon can be cooked ahead of time and reheated before serving. For an alcohol-free version, omit the bourbon and replace it with extra maple syrup or a splash of apple juice. Leftover French toast can be stored in the refrigerator for up to 2 days or frozen and reheated in a toaster or oven.
