Ingredients
  

  • 2 cups cooked pasta (fusilli, penne, or shells)
  • 2 tbsp olive oil
  • 2 tbsp grated parmesan (optional)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder (optional)
  • 2 cups chopped romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup olives (optional)
  • 0.5 cup Greek yogurt or mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1 tbsp water (to thin dressing, optional)
  • salt and pepper to taste

Instructions
 

  • Boil pasta until just al dente, then drain and let it cool slightly so it stays firm for crisping.
  • Toss the cooked pasta with olive oil, salt, pepper, garlic powder, and parmesan until evenly coated.
  • Air fry at 385–400°F (195–205°C) for 8–15 minutes, shaking halfway, until golden and crispy. Alternatively, bake at 425°F (220°C) for 15–25 minutes.
  • In a large bowl, combine lettuce, tomatoes, cucumber, onion, and olives. Mix dressing ingredients separately, then toss with the vegetables.
  • Add crispy pasta just before serving and toss lightly. Serve immediately for maximum crunch.

Notes

For best results, add crispy pasta just before serving to maintain crunch. You can customize with proteins like chicken or chickpeas, or swap the dressing for avocado or pesto. Gluten-free pasta works but crisps faster, so monitor closely.
