Ingredients
  

  • 8 ounces feta cheese, crumbled
  • 2 tablespoons fresh dill, finely chopped
  • 1 garlic clove, grated
  • 16–20 sheets phyllo dough, thawed
  • extra virgin olive oil, for brushing
  • 1 tablespoon salted butter
  • 1–2 teaspoons chili flakes
  • 1/2 teaspoon cumin seeds
  • 1/3 cup honey
  • 1 tablespoon olive oil (for chili honey)

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  • In a medium bowl, combine the crumbled feta, chopped dill, and grated garlic. Mix gently until evenly combined.
  • Lay one sheet of phyllo on a clean surface and fold it in half crosswise. Lightly brush the edges with olive oil. Keep remaining sheets covered with a damp towel.
  • Place one heaping tablespoon of feta mixture near the short edge. Fold the sides inward and roll tightly from the short end upward. Place seam-side down on the prepared baking sheet. Repeat with remaining sheets and filling.
  • Lightly brush the tops with olive oil and bake for 18–22 minutes until golden brown and crisp.
  • While baking, heat a small skillet over medium heat. Add butter, 1 tablespoon olive oil, chili flakes, and cumin seeds. Cook 1–2 minutes until fragrant. Remove from heat and stir in honey. Let infuse.
  • Drizzle warm chili honey over baked rolls or serve on the side. Serve immediately for maximum crispiness.

Notes

Use block feta in brine for the best creamy texture. Keep phyllo covered with a lightly damp towel while assembling to prevent drying. For milder heat, use 1 teaspoon chili flakes; increase gradually for more spice. Rolls can be assembled ahead and refrigerated before baking. Reheat in a 375°F oven to restore crispiness. Avoid microwaving as it softens the phyllo.
