Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 0.5 tsp turmeric
  • 0.25 tsp cinnamon
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 lemon juice
  • 1.5 cups basmati or jasmine rice, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2.5 cups chicken stock
  • 1 tsp paprika
  • 0.5 tsp turmeric
  • 0.5 tsp salt
  • 2 tbsp olive oil
  • parsley or cilantro (optional)
  • cucumber or tomatoes (optional)
  • yogurt sauce or tahini (optional)
  • lemon wedges (optional)

Instructions
 

  • In a bowl, mix olive oil, lemon juice, and spices. Coat the chicken and marinate for at least 10 minutes or up to 2 hours.
  • Heat a large skillet over medium-high heat. Add oil and sear chicken for 2–3 minutes per side until golden. Remove and set aside.
  • In the same pan, sauté onion until translucent. Add garlic, paprika, turmeric, and salt, cooking until fragrant.
  • Stir in the rinsed rice, then pour in the chicken stock. Mix well to combine.
  • Place the seared chicken on top of the rice. Cover and simmer on low heat for 18–20 minutes until rice is tender and liquid is absorbed.
  • Remove from heat and let sit covered for 5 minutes. Fluff rice and serve with desired toppings.

Notes

Rinse rice thoroughly to prevent sticking and ensure fluffy texture. Marinate chicken longer for deeper flavor if time allows. Use a tight-fitting lid when cooking rice to trap steam. Customize with toppings like yogurt sauce, tahini, or fresh herbs. Add vegetables such as bell peppers or zucchini for extra nutrition.
