These no-bake chocolate coconut bars are an easy, wholesome dessert made with simple ingredients. They’re rich, chewy, naturally sweetened, and perfect for a quick treat without turning on the oven.

Ingredients
  

  • 3 cups unsweetened shredded coconut
  • 1/2 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 cup dark chocolate chips or chopped dark chocolate

Instructions
 

  • Line an 8×8-inch baking pan with parchment paper, leaving overhang on the sides.
  • In a large bowl, mix shredded coconut, melted coconut oil, and maple syrup until evenly combined and glossy.
  • Press the coconut mixture firmly into the prepared pan and refrigerate for 45–60 minutes until firm.
  • Remove from the pan and slice into bars or squares as desired.
  • Melt the chocolate in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  • Dip each bar into the melted chocolate, coating all sides, then place on parchment paper.
  • Refrigerate the coated bars for 10–15 minutes until the chocolate is fully set.

Notes

Press the coconut mixture very firmly to avoid crumbly bars. Chill thoroughly before slicing for clean edges. For extra flavor, add a pinch of sea salt or a splash of vanilla. Store chilled for best texture.
