Mango Hibiscus Iced Tea Refresher

A vibrant and refreshing iced drink made with tangy hibiscus tea and sweet mango purée. This naturally caffeine-free refresher features beautiful layered colors, a balance of sweet and tart flavors, and a bright finish of fresh lime and mint.

Ingredients
  

  • 2 cups water
  • 2 tbsp dried hibiscus flowers
  • 2 tbsp sugar or honey
  • 1 large ripe mango, peeled and diced
  • 1/2 cup cold water
  • 1 tbsp fresh lime juice
  • 1 cup ice cubes
  • fresh mint leaves (optional garnish)
  • lime slices (optional garnish)

Instructions
 

  • In a small saucepan, bring 2 cups of water to a boil.
  • Remove the saucepan from the heat and add the dried hibiscus flowers. Let them steep for 8–10 minutes until the water turns a deep ruby-red color.
  • Pour the tea through a fine strainer into a bowl or pitcher and discard the hibiscus flowers.
  • While the tea is still warm, stir in the sugar or honey until fully dissolved. Taste and adjust sweetness if needed.
  • Allow the tea to cool to room temperature, then place it in the refrigerator until thoroughly chilled.
  • Add the diced mango, 1/2 cup cold water, and fresh lime juice to a blender. Blend until smooth and silky to create the mango purée.
  • Fill tall glasses about halfway with ice cubes.
  • Pour the mango purée into the bottom of each glass, filling about one-third of the glass.
  • Slowly pour the chilled hibiscus tea over the back of a spoon so it floats above the mango purée. Garnish with fresh mint leaves and lime slices, stir before drinking, and serve immediately.

Notes

Use very ripe mango for the smoothest purée and best natural sweetness. Chill the hibiscus tea completely before assembling the drink to help maintain the layered look. Pour the tea slowly over the back of a spoon so it floats above the mango layer. Adjust the sweetness with extra sugar, honey, or maple syrup if the tea tastes too tart.
