Equipment

  • outdoor grill or grill pan
  • large pot
  • large saucepan
  • skillet
  • mixing bowls
  • tongs
  • meat thermometer

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 1.25 lb sirloin or ribeye steak
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried Italian seasoning
  • 12 oz elbow macaroni
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2.5 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 3 cups fresh broccoli florets
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat grill to 400–450°F and oil grates. Toss shrimp with olive oil, garlic, smoked paprika, salt, pepper, and lemon juice. Rub steak with olive oil and season with salt, pepper, garlic powder, and Italian seasoning. Let steak rest at room temperature 20 minutes.
  • Grill steak 4–6 minutes per side for medium-rare (130–135°F) or until desired doneness. Remove and rest 5–10 minutes before slicing.
  • Thread shrimp onto skewers or place in grill basket. Grill 2–3 minutes per side until pink and opaque. Remove and set aside.
  • Boil salted water and cook macaroni until al dente according to package instructions. Drain and set aside.
  • Melt butter in saucepan over medium heat. Whisk in flour and cook 1–2 minutes. Gradually whisk in milk and cook 4–5 minutes until thickened. Reduce heat and stir in cheddar and mozzarella, salt, pepper, and paprika until smooth.
  • Add drained pasta to cheese sauce and stir until evenly coated. Adjust seasoning if needed.
  • Heat olive oil in skillet. Sauté broccoli with salt and pepper for 4–5 minutes until bright green and tender-crisp, or steam 3–4 minutes if preferred.
  • Slice steak against the grain. Plate mac and cheese with broccoli and top with grilled shrimp and steak slices. Serve warm.

Notes

Do not overcook the shrimp; they should be just pink and opaque. Let the steak rest 5–10 minutes before slicing for maximum juiciness. Shred cheese from a block for the smoothest sauce. Keep heat low when adding cheese to prevent graininess. Mac and cheese can be made ahead and reheated gently with a splash of milk. Swap cheeses like Monterey Jack or smoked gouda for variation. Steam broccoli for a softer texture if preferred.
