Ingredients
  

  • 300 g chocolate sandwich cookies (such as Oreos)
  • 60 g dark chocolate (70% cocoa solids)
  • 60 g unsalted butter, softened
  • ½ tsp smoked sea salt flakes
  • 150 g dark chocolate (70% cocoa solids), chopped
  • 1 tbsp cornflour (cornstarch)
  • 500 ml full-fat milk
  • 125 ml heavy cream (double cream)
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp instant espresso powder
  • 100 g granulated sugar
  • 2 tsp vanilla extract
  • 1 tbsp extra-virgin olive oil
  • ½ tsp smoked sea salt flakes (for filling)

Instructions
 

  • Place the chocolate sandwich cookies, dark chocolate, butter, and smoked sea salt into a food processor and blitz until fine, damp crumbs. Press into the base and sides of a 23cm tart pan. Refrigerate for at least 1 hour.
  • In a saucepan over low heat, combine chopped dark chocolate, milk, heavy cream, cocoa powder, espresso powder, sugar, vanilla extract, olive oil, and smoked sea salt. Stir until smooth.
  • Whisk cornflour with a few tablespoons of milk until smooth and add to the saucepan. Stir over medium heat until mixture thickens to a custard-like consistency, about 3–5 minutes. Remove from heat and cool 10 minutes.
  • Pour the warm filling into the chilled crust and smooth the top. Refrigerate overnight or at least 6 hours until fully set.
  • Remove tart from pan, slice with a hot-dipped knife, and sprinkle extra sea salt on top before serving.

Notes

Use high-quality chocolate for best results. The tart is make-ahead friendly. Store covered in the refrigerator for up to 4 days or freeze slices for up to 1 month. Let sit at room temperature for 10 minutes before serving for optimal texture.
