Ingredients
  

  • 6–7 lb bone-in turkey breast
  • 3–4 cloves garlic, minced
  • 1 tbsp dry mustard
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh sage, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 whole lemon, halved
  • 1 cup chicken broth

Instructions
 

  • Preheat the oven to 325°F (160°C). Pat the turkey breast dry with paper towels to help the skin crisp during roasting.
  • In a small bowl, mix garlic, dry mustard, chopped herbs, salt, pepper, olive oil, and lemon juice until a paste forms.
  • Loosen the skin of the turkey breast and spread most of the herb mixture underneath the skin. Rub the remaining mixture over the outside.
  • Place the turkey in a roasting pan. Pour chicken broth into the bottom and add the halved lemon to the pan or cavity.
  • Roast for about 2 hours, or until the internal temperature reaches 165°F (74°C). Tent with foil if the skin browns too quickly.
  • Remove from oven and let the turkey rest for at least 15 minutes before slicing to retain juices.

Notes

For best results, use a meat thermometer to avoid overcooking. You can substitute dried herbs (use one-third the amount), and swap olive oil for butter for a richer flavor. Let the turkey rest before slicing to keep it juicy. Leftovers are great for sandwiches, salads, and wraps.
