Ingredients
  

  • 8 slices mozzarella cheese
  • 2 cups cooked shredded chicken
  • 4 slices turkey bacon, cooked and crumbled
  • 3 tbsp low-carb ranch dressing
  • 2 tbsp chopped green onions (optional)

Instructions
 

  • In a mixing bowl, combine shredded chicken, crumbled turkey bacon, ranch dressing, and green onions. Mix until evenly coated.
  • Preheat oven to 375°F (190°C). Place mozzarella slices on a parchment-lined baking sheet and bake for 5–7 minutes until melted and slightly golden.
  • Let cheese cool briefly until flexible. Add filling to each slice and roll into a taquito shape.
  • Place taquitos seam-side down and return to oven for 3–5 minutes to crisp.
  • Allow to cool slightly before serving so they firm up and become crispy.

Notes

Work quickly when rolling the cheese, as it hardens fast. Avoid overfilling to prevent breaking. For extra crispiness, broil briefly at the end. You can customize with jalapeños, spinach, or different cheeses like cheddar or provolone.
