Ingredients
  

  • 2 lb fresh carrots, peeled and halved lengthwise if large
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup ricotta cheese
  • 1 tbsp olive oil (for ricotta)
  • 1 tsp lemon zest
  • 1-2 tsp fresh lemon juice
  • 1 pinch salt (for ricotta)
  • fresh parsley or thyme (for garnish)
  • optional drizzle of honey (for garnish)
  • freshly cracked black pepper (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Peel the carrots and slice them lengthwise if thick, keeping pieces similar in size for even roasting.
  • Place the carrots on the baking sheet. Drizzle with olive oil and honey, then sprinkle with salt and pepper. Toss gently to coat and arrange in a single layer. Roast for 25–35 minutes, flipping halfway through, until tender and caramelized.
  • While the carrots roast, add ricotta, olive oil, lemon zest, lemon juice, and a pinch of salt to a food processor. Blend for 1–2 minutes until smooth and fluffy.
  • Spread the whipped ricotta onto a serving platter. Arrange the warm roasted carrots on top. Garnish with fresh herbs, an optional drizzle of honey, and freshly cracked black pepper. Serve immediately.

Notes

For best results, do not overcrowd the pan to ensure caramelization. You can roast the carrots one day ahead and reheat before serving. Whip the ricotta fresh for the best texture. Try adding cumin or smoked paprika for a spiced version, or top with toasted pistachios for crunch.
