Ingredients
  

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp lemon juice
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup carrots, diced
  • 1/2 cup green peas
  • 1 tbsp butter
  • 1 tbsp onion, finely chopped
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Heat butter in a medium saucepan over medium heat. Add the chopped onion and sauté for about two minutes until softened and fragrant.
  • Add the long-grain rice and stir with the onion for 1–2 minutes to lightly toast the grains.
  • Stir in the diced carrots and pour in the chicken broth. Mix gently to combine.
  • Bring the mixture to a boil, then reduce the heat to low and cover the pan. Simmer for about 12 minutes.
  • During the final minutes of cooking, stir in the green peas and continue cooking until the rice is tender and the liquid is absorbed.
  • Remove from heat, fluff the rice with a fork, and stir in the chopped parsley.
  • While the rice cooks, pat the chicken breasts dry with paper towels.
  • Rub the chicken with olive oil and season evenly with garlic powder, oregano, paprika, salt, and black pepper.
  • Drizzle lemon juice over the seasoned chicken for added brightness.
  • Heat a grill pan or outdoor grill over medium-high heat and place the chicken breasts on the grill.
  • Cook the chicken for about 5–6 minutes per side until grill marks form and the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the grill and let it rest for several minutes before slicing.
  • Slice the grilled chicken and serve alongside the vegetable rice pilaf.

Notes

Toast the rice briefly before adding broth for better flavor and texture. Use fresh lemon juice for brighter taste, and let the grilled chicken rest for a few minutes before slicing to keep it juicy. You can also add extra vegetables like zucchini, bell peppers, or corn to customize the pilaf.
