Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
  • 1/2 lemon juice
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/2 cup Greek yogurt (full-fat or low-fat)
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • salt, to taste

Instructions
 

  • Mix olive oil, oregano, garlic powder, lemon juice, salt, and pepper. Coat chicken and marinate 15 minutes. Grill chicken 6–7 minutes per side until 165°F. Rest 5 minutes and slice.
  • Grate cucumber and drain water. Mix with Greek yogurt, garlic, dill, lemon juice, and salt. Chill 10–15 minutes.
  • Chop romaine, slice cherry tomatoes, cucumber, and red onion. Combine in a large salad bowl.
  • Toss vegetables gently, top with sliced chicken, olives, and feta. Spoon tzatziki over the salad or serve on the side.

Notes

Marinate chicken longer for deeper flavor. Drain cucumbers thoroughly to prevent watery tzatziki. Tzatziki can be made ahead. Serve chicken hot or cooled. Adjust salt in olives and feta to taste.
