Ingredients
  

  • 1 tomahawk ribeye steak (1.2–1.5 kg)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp fresh rosemary, chopped
  • 4 large potatoes, cut into fries
  • 2 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 2 cups broccoli florets
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1/2 lemon (juice)

Instructions
 

  • Remove the tomahawk steak from the refrigerator 45 minutes before cooking. Pat dry and rub with olive oil, garlic, salt, pepper, paprika, and rosemary.
  • Preheat the grill to high heat (about 230°C / 450°F).
  • Sear the steak on the grill for 4–5 minutes per side without moving it to develop a crust.
  • Move steak to indirect heat and cook for 10–20 minutes until desired doneness (50°C rare, 55°C medium-rare, 60°C medium).
  • Remove steak and let it rest for 10 minutes before slicing.
  • Soak cut potatoes in cold water for 20 minutes, then drain and pat completely dry.
  • Toss fries with vegetable oil, salt, and paprika. Bake at 220°C (430°F) for 30–35 minutes until golden and crispy.
  • Steam or boil broccoli for 4–5 minutes until tender-crisp.
  • Melt butter in a pan, sauté garlic, then toss with broccoli and finish with lemon juice.

Notes

Bring steak to room temperature before grilling for even cooking. Use a meat thermometer for accuracy and always rest the steak before slicing. Soak and thoroughly dry potatoes for crispier fries. Substitute ribeye if tomahawk is unavailable.
