Ingredients
  

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, sliced or chopped
  • 1 small red onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 cup Kalamata olives
  • 4–6 ounces feta cheese, crumbled or in small chunks
  • 1/4 cup extra-virgin olive oil
  • 1–2 tablespoons fresh lemon juice or red wine vinegar
  • 1/2 teaspoon dried oregano
  • salt and freshly ground black pepper, to taste

Instructions
 

  • Wash and dry all produce thoroughly. Halve the cherry tomatoes and place them in a large mixing bowl. Slice the cucumber into rounds or half-moons. Thinly slice the red onion and green bell pepper. Add all vegetables to the bowl along with the Kalamata olives.
  • In a small bowl, whisk together the extra-virgin olive oil, lemon juice (or red wine vinegar), dried oregano, salt, and black pepper. Taste and adjust seasoning if needed.
  • Pour the dressing over the vegetables and gently toss to combine. Add the feta cheese on top and lightly mix, being careful not to over-stir. Sprinkle a little extra oregano over the top and serve immediately.

Notes

For best flavor, use room-temperature ingredients and high-quality extra-virgin olive oil. Lightly salt the tomatoes and let them sit for 5 minutes to enhance sweetness. Store leftovers in an airtight container in the refrigerator for up to 2 days, keeping feta separate if possible. This salad does not freeze well. Add grilled chicken, shrimp, or chickpeas for extra protein if desired.
