Ingredients
  

  • 4 lamb chops
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp butter
  • 1 tsp lemon juice
  • 2 large baking potatoes
  • 2 tbsp butter (for potatoes)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 tsp salt (for potatoes)
  • 1/4 tsp black pepper (for potatoes)
  • 2 cups broccoli florets
  • 1 tbsp olive oil (for broccoli)
  • 1 clove garlic, minced (for broccoli)
  • 1 pinch salt and black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then prick them several times with a fork. Place them on a baking tray and bake for 45–50 minutes until tender inside and crispy outside.
  • In a small bowl, mix olive oil, minced garlic, rosemary, thyme, paprika, black pepper, and salt. Rub the mixture evenly over both sides of the lamb chops and let them rest for about 10 minutes to absorb the flavors.
  • Heat a skillet over medium-high heat. Add the lamb chops and sear for 3–4 minutes per side until browned and cooked to your preferred doneness. In the last minute, add butter and spoon the melted butter over the chops, then finish with lemon juice.
  • Steam the broccoli florets for about 5 minutes until bright green and tender. In a small pan, heat olive oil and sauté the minced garlic for about 30 seconds. Toss the broccoli in the garlic oil and season with salt and pepper.
  • Slice open the baked potatoes and add butter, shredded cheddar cheese, sour cream, salt, and pepper. Serve the loaded potatoes alongside the lamb chops and garlic broccoli while hot.

Notes

For the best flavor, let the lamb chops rest for a few minutes after cooking so the juices redistribute. For crispier potato skins, rub the potatoes with olive oil and sprinkle with salt before baking. You can substitute beef or chicken chops for lamb if desired, and use dairy-free butter, cheese, or sour cream to make the dish dairy-free.
