Ingredients
  

  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1/3 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 cup white rice
  • 2 cups water (for rice)
  • 1/2 tsp salt
  • 1 1/2 cups broccoli florets
  • 1 tsp sesame seeds (optional)
  • 1 green onion, sliced

Instructions
 

  • Rinse the rice under cold water until clear. Combine with water and salt in a pot, bring to a boil, then cover and simmer for 15 minutes. Let sit 5 minutes and fluff.
  • Steam or boil broccoli for 4–5 minutes until crisp-tender. Drain and set aside.
  • In a bowl, mix soy sauce, honey, brown sugar, garlic, and ginger until combined.
  • Heat oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through.
  • Add sauce to the chicken and stir. Mix cornstarch with water, add to skillet, and cook 2–3 minutes until thickened.
  • Divide rice into bowls, top with chicken and broccoli, and garnish with sesame seeds and green onions. Serve immediately.

Notes

Use chicken thighs for juicier results or breasts for a leaner option. Adjust sweetness and saltiness to taste by balancing honey and soy sauce. Swap broccoli with snap peas, bell peppers, or bok choy. Store leftovers in the fridge for up to 4 days and reheat gently with a splash of water.
