Ingredients
  

  • 2 sirloin or ribeye steaks
  • salt and black pepper to taste
  • 2 tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 tsp fresh thyme (optional)
  • 4 eggs
  • 3 large potatoes, diced
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • salt and black pepper to taste

Instructions
 

  • Preheat oven to 200°C (400°F). Toss diced potatoes with oil, paprika, garlic powder, salt, and pepper. Spread on a baking tray in a single layer and roast 25–30 minutes, flipping halfway.
  • Season steaks with salt and black pepper. Heat olive oil in a skillet over high heat. Sear steaks 3–4 minutes per side, adding garlic and thyme. Rest steaks 5 minutes.
  • In the same skillet, reduce heat to medium. Fry eggs sunny-side-up until whites are set but yolks remain runny.
  • Plate the roasted potatoes, add rested steak, and top with fried eggs. Serve immediately.

Notes

Rest steak after cooking to retain juices. Cut potatoes evenly for consistent roasting and crispiness. Use high heat to sear steak for a flavorful crust. Season generously in layers. Spread potatoes in a single layer for best results. Optional herbs like thyme or rosemary enhance flavor.
