Ingredients
  

  • 12 oz spaghetti, cooked al dente
  • 3 cups cooked shredded chicken
  • 2 tbsp butter
  • 1 small onion, diced
  • 1 can condensed cream of chicken soup (10.5 oz)
  • 1 can Rotel diced tomatoes with green chilies, drained (10 oz)
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup milk
  • 1 tsp seasoned salt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions
 

  • Cook the spaghetti according to package instructions until al dente. Drain and set aside. Prepare shredded chicken.
  • In a large skillet, melt butter over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes. Stir in seasoned salt, garlic powder, and black pepper.
  • Add cream of chicken soup, Velveeta, milk, and drained Rotel tomatoes. Stir until cheese is melted and sauce is smooth.
  • Add shredded chicken and mix well. Fold in cooked spaghetti until evenly coated with sauce.
  • Transfer mixture to a greased 9x13-inch baking dish. Top with shredded cheddar cheese. Cover with foil and bake at 350°F (175°C) for 20 minutes, then uncover and bake 10 more minutes until bubbly.
  • Let casserole rest for 5 minutes before serving to allow flavors to set.

Notes

Use rotisserie chicken to save time. For less spice, choose mild Rotel tomatoes. Add vegetables like bell peppers or spinach for extra nutrition. Let the casserole rest before serving for better texture.
