Equipment

  • large pot for boiling noodles
  • large skillet or wok for stir-frying
  • cutting board
  • chef’s knife
  • mixing bowl for preparing the sauce
  • tongs or spatula for tossing noodles

Ingredients

  • 12 oz noodles (rice noodles, udon, or spaghetti)
  • 1 lb boneless chicken breasts, thinly sliced
  • 2 cups broccoli florets
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp green onions, chopped
  • 1 tsp sesame seeds (optional)
  • 1/2 tsp red chili flakes (optional)

Instructions

  • Bring a pot of salted water to a boil and cook the noodles according to the package instructions. Drain and briefly rinse with cold water to stop the cooking and prevent sticking. Set aside.
  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Season the sliced chicken with salt and black pepper. Cook for 4–5 minutes, stirring occasionally, until golden brown and fully cooked. Remove from the skillet and set aside.
  • Add the remaining 2 tablespoons of olive oil to the skillet. Add the minced garlic and grated ginger and cook for about 30 seconds, stirring constantly until fragrant.
  • Add the broccoli florets to the skillet and stir-fry for 3–4 minutes until tender but still crisp. If needed, add a tablespoon of water to create steam.
  • In a small bowl, combine the soy sauce, oyster sauce, sriracha, and honey. Mix well until smooth and evenly combined.
  • Return the cooked chicken to the skillet with the broccoli. Pour the prepared sauce over the mixture and toss everything together until evenly coated. Cook for about 1 minute to blend the flavors.
  • Add the cooked noodles to the skillet and gently toss with tongs or a spatula until the noodles are fully coated with the sauce, chicken, and broccoli. Heat for about 2 minutes.
  • Remove from heat and garnish with chopped green onions, sesame seeds, and red chili flakes if desired. Serve immediately while warm.

Notes

Slice the chicken thinly so it cooks quickly and stays tender. Use high heat when stir-frying to maintain crisp vegetables and strong flavor. Do not overcook the broccoli—tender-crisp texture works best. Adjust the spice level by reducing or increasing the sriracha and chili flakes. Rice noodles, udon noodles, or even spaghetti can be used depending on what you have available.
