Ingredients
  

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • salt and black pepper, to taste
  • 1 cup white rice
  • 2 cups water
  • 1/2 tsp salt
  • 1 cucumber, sliced
  • 2 tomatoes, diced
  • 1/4 red onion, finely chopped
  • 1/2 lemon, juiced
  • 1 tbsp olive oil
  • salt and black pepper, to taste
  • fresh parsley, chopped

Instructions
 

  • Rinse 1 cup of rice under cold water until the water runs clear.
  • In a medium pot, combine rice with 2 cups water and ½ teaspoon salt.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  • Remove from heat, let it rest 5 minutes, then fluff with a fork.
  • Preheat a grill pan or skillet over medium-high heat.
  • Rub chicken breasts with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  • Grill for 6–7 minutes per side, or until fully cooked and golden brown.
  • Let the chicken rest for 5 minutes, then slice thinly.
  • In a bowl, combine diced tomatoes, sliced cucumber, and chopped red onion.
  • Drizzle with olive oil and lemon juice.
  • Season with salt and pepper and toss gently.
  • Place a serving of rice on each plate.
  • Arrange sliced chicken next to the rice.
  • Add the fresh salad and sprinkle chopped parsley over the top.
  • Serve warm and enjoy your balanced, flavorful meal.

Notes

Let the chicken rest after grilling to keep it juicy. Rinse rice היט to improve texture. For extra flavor, add smoked paprika or chili flakes. Prepare the salad just before serving for maximum freshness. Great for meal prep—store components separately.
