Equipment

  • small saucepan
  • grill or cast-iron skillet
  • tongs
  • instant-read thermometer
  • paper towels

Ingredients

  • 4 top sirloin steaks (about 1 inch thick)
  • to taste salt and freshly ground black pepper
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 2 tsp garlic powder

Instructions

  • In a small saucepan, melt the butter over medium-low heat. Add the minced garlic and garlic powder, stirring until fragrant, about 1–2 minutes. Be careful not to burn the garlic. Remove from heat and set aside.
  • Pat the steaks dry with paper towels. Generously season both sides with salt and freshly ground black pepper.
  • Preheat your grill to high heat. Place the steaks on the grill and cook for 4–5 minutes per side for medium-rare, adjusting for your preferred doneness. Use an instant-read thermometer to check: 135°F for medium-rare, 145°F for medium. Alternative: use a cast-iron skillet and finish in the oven if needed.
  • Remove the steaks from heat and let them rest for 2–3 minutes. Brush generously with the prepared garlic butter before serving.

Notes

Pat steaks dry before cooking, don’t overcrowd the grill, and use a meat thermometer to check doneness. Garlic butter can be made a day ahead. Optional: add fresh herbs or spices for extra flavor.
