Ingredients
  

  • 2 sirloin steaks (1–1.5 inches thick)
  • salt & black pepper, to taste
  • 2 tbsp butter
  • fresh parsley, chopped (for garnish)
  • 8 oz mushrooms, sliced (baby bella or cremini)
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh oregano, chopped
  • 1/2 cup red wine (or beef broth + splash of balsamic vinegar)
  • 1 tbsp white wine vinegar (or lemon juice)
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1 bunch broccolini
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • salt, to taste
  • creamy mashed potatoes (optional side)

Instructions
 

  • Preheat oven to 275°F (135°C). Season steaks with salt and pepper. Place on a wire rack over a baking sheet and bake 20–30 minutes until 115–120°F for medium-rare. Heat skillet with butter and sear 1–2 minutes per side. Rest steaks 5–10 minutes before slicing.
  • Melt butter in the same skillet over medium heat. Sauté shallots and garlic until fragrant. Add mushrooms and cook 5–6 minutes until browned. Deglaze with red wine or broth mixture, scraping up browned bits. Stir in vinegar/lemon juice and chicken broth; simmer until slightly reduced. Add cream, thyme, and oregano; cook 2–3 minutes until thickened. Adjust seasoning with salt and pepper.
  • Heat olive oil in a skillet over medium heat. Add garlic and broccolini; sauté 5–6 minutes until tender-crisp. Season with salt.
  • Plate steak and spoon mushroom sauce on top. Serve with broccolini and mashed potatoes. Garnish with fresh parsley.

Notes

Use room-temperature steak for even cooking. Rest steak after searing to retain juices. Adjust sauce seasoning at the end for best flavor. Alcohol-free red wine substitutions include beef broth with balsamic or grape juice. Light cream or half-and-half can replace heavy cream for a lighter sauce.
