Ingredients
  

  • 10 slices sandwich bread (white or whole wheat)
  • 10 links cooked breakfast sausage (pork-free options: chicken, turkey, plant-based)
  • 3 large eggs
  • 1 tbsp milk (or almond/oat milk for dairy-free)
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • unsalted butter (for frying)

Instructions
 

  • Flatten each slice of bread using a rolling pin and trim off the crusts. This makes it easier to roll around the sausage without tearing.
  • Place a cooked sausage link at the edge of each flattened bread slice and roll it tightly. Make sure the seam is on the bottom to prevent it from unrolling during cooking.
  • In a medium bowl, whisk together eggs, milk, cinnamon, and vanilla extract until smooth.
  • Coat each bread roll-up in the egg mixture, making sure all sides are covered but not overly soggy.
  • Heat butter in a skillet over medium heat. Fry the roll-ups, turning occasionally, until all sides are golden brown and the egg is cooked through.
  • Serve warm with maple syrup, powdered sugar, or fresh fruit for a complete breakfast experience.

Notes

Flatten the bread evenly, don’t overfill with sausage, and use medium heat for frying. Optional: sprinkle cinnamon-sugar on top for extra sweetness. Customize with cheese, apple slices, or chocolate-hazelnut spread.
