Ingredients
  

  • 1 cup frozen raspberries
  • 1 tbsp honey
  • 1 tsp fresh lemon juice
  • 1/4 cup cold water
  • 1 cup pineapple juice
  • 1/2 cup coconut cream
  • 1/2 tsp vanilla extract
  • 1/2 cup crushed ice
  • 3–4 fresh raspberries (for garnish)
  • 1 pineapple wedge (for garnish)
  • 2–3 fresh mint leaves (for garnish)

Instructions
 

  • Add the frozen raspberries, honey, lemon juice, and cold water to a blender. Blend until smooth and thick, similar to a smoothie consistency. If the puree is too thick, add a tablespoon of water at a time until it blends easily.
  • Pour the raspberry puree into the bottom of a tall serving glass, filling about one-third of the glass to create the bright berry base layer.
  • Rinse the blender, then add the pineapple juice, coconut cream, crushed ice, and vanilla extract.
  • Blend the mixture until it becomes smooth, creamy, and slightly frothy.
  • Slowly pour the pineapple coconut mixture over the raspberry layer. Pour along the inside of the glass or over the back of a spoon to keep the layers separate.
  • Garnish the drink with fresh raspberries, a pineapple wedge, and a sprig of mint. Serve immediately while cold and creamy.

Notes

Use frozen raspberries for a thicker puree that forms a stable bottom layer. Pour the pineapple coconut mixture slowly over the back of a spoon to maintain the layered look. If the drink tastes too tart, add a little extra honey or maple syrup. For a lighter version, substitute coconut cream with light coconut milk. Chilling the serving glass in the freezer for a few minutes helps keep the drink cold longer.
