Ingredients
  

  • 2 lb russet potatoes, peeled and thinly sliced
  • 2 cups cooked ham, diced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups milk
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 small onion, finely chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  • In a saucepan over medium heat, melt the butter. Add chopped onion and cook until soft. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Season with salt and pepper.
  • Layer sliced potatoes in the dish, then add ham and cheese. Pour some sauce over. Repeat layers until all ingredients are used, finishing with cheese on top.
  • Cover with foil and bake for 40–60 minutes until potatoes are tender. Remove foil and bake another 20–30 minutes until golden and bubbly.
  • Let the gratin rest for 10 minutes before serving to allow the layers to set.

Slice potatoes evenly for consistent cooking. Let the gratin rest before serving to help the layers set. You can substitute ham with chicken or mushrooms, and swap cheeses like Gruyère or mozzarella for variation. Freshly shredded cheese melts best.
