Ingredients
  

  • 1 lb ground pork
  • 1 large egg
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup tomato paste
  • 1/2 cup chicken broth
  • 1/4 cup maple syrup
  • 1/4 cup bourbon
  • 1/4 cup coconut aminos or low-sodium soy sauce
  • 2 lb sweet potatoes, peeled and cubed
  • 2 tbsp butter or olive oil
  • 1/4 cup milk or dairy-free milk
  • 1/2 tsp salt, or to taste

Instructions
 

  • Place the peeled and cubed sweet potatoes in a large pot, cover with water, and bring to a boil. Reduce to a simmer and cook for 15–20 minutes, until fork-tender. Drain and set aside.
  • In a large bowl, combine ground pork, egg, breadcrumbs, garlic, salt, and pepper. Mix gently until just combined.
  • Shape the mixture into meatballs about 1½ inches wide. Heat oil in a skillet over medium heat and cook meatballs, turning occasionally, until browned and cooked through, about 10–12 minutes. Remove to a plate.
  • In the same skillet, whisk together tomato paste, chicken broth, maple syrup, bourbon, and coconut aminos. Bring to a gentle simmer until smooth and slightly thickened.
  • Return the meatballs to the skillet, spoon sauce over them, cover, and simmer for 10–15 minutes until glossy and thick.
  • Add butter, milk, and salt to the cooked sweet potatoes and mash until smooth and creamy.
  • Spoon sweet potato mash onto plates and top with pork meatballs and bourbon-maple sauce. Serve warm.

Notes

For an alcohol-free version, replace the bourbon with extra chicken broth and 1–2 teaspoons apple cider vinegar or lemon juice. Ground turkey or chicken can be used instead of pork, and dairy-free butter and milk work well for the sweet potato mash.
