Ingredients
  

  • 1 pound smoked sausage, sliced into ¼-inch pieces
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 12 oz bow tie (farfalle) pasta
  • 1 14.5 oz can diced tomatoes
  • 2 cups chicken stock or broth
  • 1 cup heavy cream (or half-and-half/milk)
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced (optional garnish)
  • fresh parsley or basil, chopped (optional garnish)

Instructions
 

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add smoked sausage and cook until slightly browned, about 4–5 minutes. Stir in diced onion and cook until translucent, about 2–3 minutes. Add garlic and cook for 30 seconds until fragrant.
  • Stir in uncooked pasta, diced tomatoes with juices, and chicken stock. Ensure pasta is evenly submerged. Bring to a boil, then reduce heat to simmer.
  • Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed. Add more stock or water if needed.
  • Remove from heat. Stir in heavy cream and shredded cheddar cheese until melted and creamy. Adjust seasoning with salt and pepper.
  • Sprinkle with green onions or fresh parsley. Serve immediately while warm and creamy.

Notes

Try variations with spicy sausage, extra veggies, or a cheese blend. Refrigerate leftovers for up to 3 days or freeze portions for up to 2 months. Reheat gently with a splash of stock or milk to maintain creaminess.
