Ingredients
  

  • 8 chicken drumsticks, skin-on
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 lemon, juiced
  • 1 tbsp fresh parsley, chopped
  • 4 large potatoes, cut into wedges
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • salt and pepper, to taste
  • 2 cups green cabbage, finely shredded
  • 1 carrot, grated
  • 1/4 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper, to taste
  • sliced tomato (optional)
  • sliced cucumber (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.
  • In a bowl, mix olive oil, minced garlic, oregano, thyme, paprika, salt, pepper, and lemon juice. Rub the marinade thoroughly over the chicken drumsticks and let marinate for at least 20 minutes.
  • Toss potato wedges with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
  • Arrange the chicken drumsticks and potato wedges in a single layer on the prepared baking tray, leaving space between pieces.
  • Bake for 40–45 minutes, turning the potatoes halfway through, until the chicken reaches 165°F (74°C) internally and the potatoes are crispy and tender.
  • Combine shredded cabbage and grated carrot. Whisk together Greek yogurt, lemon juice, olive oil, salt, and pepper, then toss with the cabbage mixture until coated.
  • Let chicken rest for 5 minutes. Garnish with chopped parsley and serve with crispy potatoes, coleslaw, and optional tomato and cucumber slices.

Notes

For deeper flavor, marinate the chicken up to 2 hours in the refrigerator. Pat drumsticks dry before marinating for crispier skin. Cut potatoes evenly for uniform roasting. Broil for the last 2–3 minutes for extra crispiness. Use skinless chicken to reduce fat if desired. Coleslaw is best prepared fresh before serving.
