Ingredients
  

  • 225 g spaghetti
  • 3 tbsp extra virgin olive oil
  • 1 head garlic, thinly sliced
  • 20 cherry tomatoes, halved
  • 1 tsp dried oregano
  • 120 ml white wine
  • 1 pinch sea salt
  • 1 dash freshly ground black pepper
  • 10 leaves fresh basil, torn
  • 30 g grated Manchego cheese

Instructions
 

  • Slice the garlic thinly and halve the cherry tomatoes. Tear the basil leaves and measure the olive oil and cheese. Bring a large pot of salted water to a boil.
  • Add spaghetti to boiling water and cook until al dente according to package instructions. Reserve 1/4 cup pasta water, then drain.
  • Heat olive oil in a large skillet over medium heat. Add sliced garlic and sauté for 1–2 minutes until fragrant. Add cherry tomatoes and oregano, cooking about 3 minutes until tomatoes soften.
  • Pour in white wine and simmer for 2 minutes. Season with salt and pepper. Add a tablespoon of reserved pasta water if the sauce needs loosening.
  • Add drained pasta to the skillet and toss well with the sauce. Cook together for 1 minute, then remove from heat and stir in fresh basil.
  • Serve immediately topped with grated Manchego cheese and an optional drizzle of olive oil.

Notes

Use fresh cherry tomatoes and basil for the best flavor. Do not burn the garlic—cook just until fragrant and lightly golden. Reserve some pasta water to loosen the sauce if needed. For a vegan version, swap Manchego with nutritional yeast or plant-based cheese. White wine can be replaced with vegetable broth and a squeeze of lemon juice.
