Ingredients
  

  • 1 lb ground turkey
  • 1 cup quick-cooking oats
  • ½ cup ketchup
  • ½ cup BBQ sauce
  • 1 cup finely chopped carrots
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 large baking potatoes, peeled and cut into chunks
  • 2 tbsp butter (or margarine)
  • 1 tbsp garlic, sautéed
  • ½ cup Parmesan cheese, grated
  • ½ cup Asiago cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a small pan over medium heat. Sauté the chopped carrots and garlic until soft, about 3–5 minutes.
  • In a large bowl, combine ground turkey, oats, ketchup, BBQ sauce, sautéed vegetables, parsley, salt, and pepper. Mix gently until just combined.
  • Form the mixture into a loaf shape or press into a greased loaf pan.
  • Spread a thin layer of ketchup or BBQ sauce over the top for a glaze.
  • Bake for about 1 hour 10 minutes, or until the internal temperature reaches 165°F (74°C). Remove from oven and let rest 5–10 minutes before slicing.
  • While the meatloaf bakes, boil peeled potato chunks in salted water for about 15 minutes, until tender.
  • Drain and return to the pot. Mash with butter, sautéed garlic, Parmesan, Asiago, salt, and pepper until creamy. Adjust consistency with a splash of milk if desired.
  • Slice the meatloaf and plate alongside generous scoops of cheesy mashed potatoes. Garnish with chopped parsley for color and freshness.

This recipe balances flavor, texture, and ease of preparation. Use lean ground turkey or swap with beef for richer flavor. Don’t overmix the meatloaf to keep it tender. Let it rest before slicing and serve the mashed potatoes cheesy and creamy. Optional: Brush extra BBQ sauce on top for a more caramelized glaze.
