Ingredients
  

  • 200 g digestive biscuits, crushed
  • 80 g melted butter
  • 300 g cream cheese
  • 200 ml heavy cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1.5 cups mango puree
  • 1 tbsp lemon juice
  • 0.5 cup strawberries, chopped
  • 0.5 cup raspberries
  • 0.5 cup blackberries
  • fresh mint leaves for garnish

Instructions
 

  • Crush the digestive biscuits and mix with melted butter. Spoon into the bottom of each serving cup and press lightly.
  • Beat cream cheese and powdered sugar until smooth. Add vanilla. Whip heavy cream to soft peaks and fold into cream cheese mixture.
  • Layer cheesecake filling over biscuit base. Mix mango puree with lemon juice and layer on top. Repeat layers if desired.
  • Top each cup with fresh berries and garnish with mint leaves.
  • Refrigerate for at least 2 hours before serving.

Notes

Use fresh or canned mango puree depending on season. Whip cream gently and fold into cream cheese to maintain a light texture. Chill for at least 2 hours before serving. Layer neatly for an attractive presentation.
