Ingredients
  

  • 14 oz beef or chicken smoked sausage, cut into 1-inch pieces
  • 10 slices turkey bacon, halved
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • toothpicks for securing and serving

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Cut the smoked sausage into 1-inch bite-sized pieces for even cooking.
  • Wrap each sausage piece with half a slice of turkey bacon and secure it with a toothpick so the bacon stays in place while baking.
  • Place the wrapped sausage bites evenly on the prepared baking sheet, leaving a little space between each piece so they crisp properly.
  • In a small bowl, whisk together honey, Dijon mustard, brown sugar, garlic powder, smoked paprika, black pepper, and olive oil until smooth.
  • Brush the honey mustard glaze generously over each sausage bite using a pastry brush.
  • Bake in the preheated oven for 20–25 minutes, until the turkey bacon becomes slightly crispy and the glaze begins to caramelize.
  • During the last 5 minutes of baking, brush a little extra glaze over the bites to enhance flavor and create a glossy finish.
  • Remove from the oven and let the bites cool slightly. Transfer to a serving platter and sprinkle with freshly chopped parsley before serving.

Notes

For extra crispy bacon, broil the bites for 1–2 minutes at the end of baking. You can substitute maple syrup for honey for a deeper sweetness or add a pinch of cayenne or chili flakes to the glaze for heat. Prepare the bites ahead of time and bake just before serving for the best flavor and texture.
